Hard ice cream has more hard texture than the other kind of ice cream because this ice cream is use some whole eggs. This ice cream is made with cream and/or milk, sugar, and may contain eggs, stabilizers and other flavouring ingredients such as vanilla, chocolate, fruit and many other add-ins. Maybe if sometimes you want ice cream that heavier in your mouth just eat this one.

2.       Soft Ice Cream

Soft ice cream usually served at the ice cream shop. This ice cream is more smooth because don’t use the eggs. To have a smooth texture you need a machine to keep the temperature of the ice cream when you put the ice cream to a bowl or a con. This ice cream made only with milk and/or cream, sugar, stabilizers and flavourings.

How to Make Poire Belle Helene

Monday, 18 May 2015 / No Comments
Good day guys…
Before I already posted about the steps to make our creamy panna cotta. So this time, we will go out from Italy to French. I just found such a unique dessert from French. This classic French recipe comes from a classic French chef, Alain Benech, which is much appreciated by everyone. I think it is so easy to make a t home. Lets check this out…

How to make poire belle helene
Image taken from: http://www.frenchtoday.com/
Ingredients:
4-6 Pears
1 Liter Water
200g Sugar
Lemon or Orange zests
Optional: Vanilla
Optional: 1 Star Anis
250g Dark bittersweet chocolate
30cl Heavy cream
50g Butter (room temperature)
Slivered toasted almonds
Ice-cream
Steps:
1. Slowly heat up the cream in a heavy bottom pan or even better in a double-boiler (“un bain-marie”) (a container on top of a simmering pot of water).  Once it’s heated (never bring to a boil!), then add the chocolate (chopped up into small even pieces).  Keep mixing until the chocolate completely melts.  Then add the butter and mix gently until it has all melted and incorporated the chocolate mixture.

2. (Note: in the picture that I took, I kind of screwed up my chocolate by trying to go a little too fast.  This is why the texture is more granular and not silky smooth… Still delicious but much less presentable.  You’ll do a lot better than me I’m sure!)

3. In the other place, stir the heavy cream and sugar in a saucepan, cocok in the medium heat.

4. Firstly, you need to prepare your pears. Peel the pears and cut off the lower part to make the pear stand nicely in the plate when its serve. Then, from the bottom, core the pears.

5. In a large saucepan. Add the water and mix it with sugar, the zests and optionally the star anis and the vanilla. Cook it and let it come to very gentle simmer.

6. Add the pear, and simmer the pears inside the syrup liquid until smooth.

7. In the other place, prepare the chocolate sauce. In a heavy bottom pan, heat the cream then add the chopped chocolate. Cook it until the chocolate melts. Then, add the butter mix it gently until the chocolate mixture perfectly melted.

8. In a desert dish, place one of the pears standing up.  Add an ice cream scoop and then drizzle the warm chocolate sauce on top of both the pear and the ice-cream. Pour the almond on the top.

Now you have your own Poire Belle Helene. Hopefully you can enjoy this recipe. Have a great day…

Hi there everyone! Welcome back to Our Foods and Cuisine Blog. Lately, I've been thinking about blended drinks all the time. The one with ice cream and creamy texture. Vanilla Milkshake: This is the most simple milkshake you will find i guarantee. Just pour 1 cups of plain milk, 5 scoops of vanilla ice cream, and 1 tsp of vanilla extract in to a blender, and blend them all together until it's mixed. Your Classic Vanilla milkshake is ready to serve!

Caramel Milkshake: This is a fun milkshake. Cause, you can use 2 Flavor Ice cream and Caramel syrup! all you need is 1 cup of plain milk, 2 scoops of vanilla and caramel ice cream (one scoop each), and LOTS of Caramel syrup (actually, not too much, just as you deem fit :)). Blend it all together, and your Caramel milkshake is done!

Cookies and Cream Milkshake: If you are an Oreo lover, than this milkshake would definitely suit you! so, as usual, 1 cup of plain milk, 2 scoops of vanilla ice cream (if you want to use other flavor it's also okay, but the taste won't be the same as when you use vanilla ice cream), and 4 pcs ( i like to put 5) of original Oreo, or other Oreo flavor. Blend it all together and your Cookies and Cream Milkshake is ready to enjoy!

Banana Milkshake: This one includes real fruit! all you need is 1 cup of plain milk, 2 scoops of vanilla ice cream, 1 ripe banana, and 1 tsp of vanilla extract. blend it all together and your banana milkshake is ready to serve!

Choco-Strawberry Milkshake: This milkshake is also a fun and two-flavored milkshake! But if you don't like chocolate or strawberry flavor be free to change one or the other ingredient to the ones you like. So, you will need 1 cup of plain milk, 2 scoop of chocolate ice cream, 1/2 cup of strawberries, and 1 tbs of chocolate chips. blend it all together and your two-flavored milkshake is done!!

Good day everyone… how was your blessing day? I hope you can eat more and more delicious food to enjoy every second in your life. Eating delicious food is the best blessing, isn’t it?
Well in the afternoon I just ate such a delicious ice cream. That’s green tea ice cream or maybe many people called this one as matcha ice cream. This ice cream is from Japan, you can find many brands in the stores. But if you can make this one at home it will be perfect.

Ingredients:

2 cups Half & Half (or 1 cup whole milk + 1 cup heavy whipping cream)
3 Tbsp. (18 g) green tea powder (matcha)
½ cup sugar
Pinch of salt (about 1/16 tsp.)

Equipment:

Ice cream maker

Instructions:

1. Freeze the ice cream bowl for 24 hours.
2. In a medium saucepan, whisk together the half and half, sugar and salt.
3. Start cooking the mixture over medium heat, and add green tea powder. Stir often and cook until the mixture starts to foam and is very hot to the touch but not boiling.
4. Remove from the heat and transfer the mixture to a bowl sitting in an ice bath. When the mixture is cool, cover with plastic wrap and chill in the refrigerator for 2-3 hours.
5. Once the mixture is thoroughly chilled, transfer to a pre-chilled ice cream maker and churn according to the manufacturer’s instructions (20-25 minutes). Transfer the soft ice cream into an airtight container and freeze for at least 3 hours before serving.

I this most of the people will like the taste of this ice cream. So you must try this one in your home. If you don’t have any ice cream machine, please check our next post about how to make ice ream without ice cream machine. See you in the next post, have a great day…

How to Make Ice Cream Without Machine

Hello everyone. As I told you before I will share about how to make ice cream without ice cream machine. Ice cream has founded far before the electricity, so actually the original ice cream before was made without the machine. At home we are definitely can make delicious ice cream by our own.

These are the steps:

1. Prepare your ice cream mixture, then chill it over an ice bath.
2. Put a deep baking dish, or bowl made of plastic, stainless steel or something durable in the freezer, and pour your custard mixture into it.
3. After forty-five minutes, open the door and check it. As it starts to freeze near the edges, remove it from the freezer and stir it vigorously with a spatula or whisk. Really beat it up and break up any frozen sections. Return to freezer.
4. Continue to check the mixture every 30 minutes, stirring vigorously as it’s freezing. If you have one you can use a hand-held mixer for best results, or use a stick-blender or hand-held mixer. But since we’re going low-tech here, you can also use just a spatula or a sturdy whisk along with some modest physical effort.
5. Keep checking periodically and stirring while it freezes (by hand or with the electric mixer) until the ice cream is frozen. It will likely take 2-3 hours to be ready.

Making the ice cream is so simple right? Enjoy your own ice cream.
See you next time…

The History of Baked Alaska

Good day everyone… how was your day? I hope you still have more time to enjoy with the things that you like.

Well, today I want to tell you about a cute dessert that for me, has a really good story. That’s Baked Alaska or also known as glace au four, omelette à la norvégienne, Norwegian omelette and omelette surprise. Baked Alaska was a spectacular cake, topped with solidly frozen ice cream, the whole enveloped in meringue, then browned and served still warm from the oven.
The History Of Baked Alaska
Image taken from: foodnetwork

When I read this dessert name I just wondered about what kind of relation between this dessert and Alaska. After I read the history, I’m amazed with the fact that this food is made when United States purchase Alaska from Russia in 1867 by Charles Ranhofer, chef at the famous Delmonico's restaurant in New York. Firstly it was called as Alaska Florida Cake but soon changed to Baked Alaska.

Far before that day, in 1802 according to some historians, Thomas Jefferson (1743-1826), third president of the United States from 1801-1809, was one of the first to serve ice cream at a state banquet in the White House. He is reported to have served ice cream encased in hot pastry at a White House dinner during his presidency. Although the name came much later, it is likely that this was a dish similar to Baked Alaska.

After I know about this history, I just really want to try this dessert, not only because this dessert contains my favorite (ice cream) but also I want to try this one because I want to enjoy the feeling of the winer that the United States felt when they grabbed Alaska, or imagining the feeling if I eat that dessert in the White House with president Thomas Jefferson. Ha-ha, just ignore me.

The most important thing that I want to tell you is everything was have their own history, including the food that you eat every day. That’s mean they are life with us, and we always have our own chance to take a lesson from them, every one of them. Just respect everything that we got. Because they are special by their own.

If you have ever enjoyed this dessert, please tell me how amazing is that in the comment below. Have a good day, see you next time…
